ESPRESSO BANANA BREAD (egg-free/vegan)
4 RIPE WITH SPOTS BANANAS MASHED
1 CUP COCONUT SUGAR
1/3 CUP COCONUT OIL MELTED
1/2 CUP ESPRESSO
1 TEASPOON VANILLA EXTRACT
2 HEAPING TABLESPOONS YOGURT
2 CUP FLOUR
1/2 TEASPOON BAKING SODA
1/2 TEASPOON BAKING POWDER
1 TEASPOON CINNAMON
1 TEASPOON ESPRESSO POWDER
1/2 TEASPOON SALT
PREHEAT OVEN TO 350 DEGREES. MASH BANANAS. MIX IN COCONUT SUGAR, COCONUT OIL, ESPRESSO, VANILLA, & YOGURT. ADD DRY INGREDIENTS TO WET. MIX UNTIL COMBINED. POUR INTO PARCHMENT LINED LOAF PAN AND BAKE FOR 1 HOUR OR UNTIL TOOTH PICK INSERTED COMES OUT CLEAN. ENJOY!
