Orange Blueberry Cake with Orange Glaze

INGREDIENTS

For the Cake

1/2 cup butter (melted)

1 & 1/4 cups sugar

2 eggs

1 teaspoon vanilla extract

1 & 3/4 cup flour

1/2 teaspoon salt

1 tablespoon baking powder

1/2 cup heavy cream

2 cups blueberries

Zest of 1 orange

For the Glaze

Zest of 1 orange

Juice of 1 orange

1 cup powdered sugar

1/2 teaspoon vanilla extract

1/2 tablespoon melted butter

INSTRUCTIONS

Preheat oven to 350 degrees F. Pinch together orange zest and sugar. Whisk together butter and sugar with orange zest. Add vanilla. Next add one egg at a time, fully mixing each one. Sift dry ingredients. Add to butter mixture alternating heavy cream. Fold in blueberries. Line a 8-inch round cake pan with parchment paper. Pour batter into prepared pan and bake for 1 hour and 10 minutes. Cool for 10 minutes. While the cake is cooling, make the glaze. Whisk all glaze ingredients together until it is free of lumps. Once the cake is cool enough, flip in onto a plate and peel back the parchment paper. Pour glaze all over the top of the cake. Enjoy now or wait a few minutes for the glaze to harden.
